Lunch Box
I update this post today so that any of you who are going to work on Monday and regularly pack your own lunch might wanna try it.

Sadik has always come for lunch at home, but it’s been busy for him for few weeks now that it’s impossible to take a break back home, so we had to pack him food to office.

Actually I love packing lunch for him. It’s kind of a tiny reminder of my love and care when he’s away from home. It doesn’t take much time and I really enjoy cooking it.

My lunch box strategy

Option: 1 Rice with quick stir fried dish

Option: 2 Homemade tortilla and meat and salad

Here are some of the boxes I made last week:

Rice with stir fried chicken in curry paste with string beans and omelet

Rice with Stir fried chicken with garlic and white pepper and stir fried pumpkin and egg

To make these two combos is so easy, you just have to cook some rice and top with your favourite stir fry or anything you like.

To make Rice with Stir fried chicken in curry paste

Ingredients: (1 box)

100 gm chicken breast- sliced

1 tbsp Red Thai curry paste- form Asian grocery store

1 tsp fish sauce

1/2 tsp sugar

1/4 cup chicken stock or water

1/2 cup- sliced string beans

Few fresh basil

1 tbsp oil

Heat a wok or pan over the medium heat and add oil.

Add red curry paste and stir until fragrance.

Add chicken and stir for few second then add sugar, fish sauce and chicken stock, and stir for 3 minutes.

Add string beans and stir for another 1 minutes.

Make sure that chicken is cooked, then turn off the heat and throw some basil in.

Now all you need to do is put some rice in your lunch box, top this delicious stir fried chicken and maybe some omelet, too

Rice with stir fried chicken with garlic and white pepper and stir fried pumpkin with egg

Ingredients: (1 box)

For chicken

50 gm chicken- sliced

4 cloves garlic- minced

1 tsp crushed white pepper

1/2 tsp sugar

1 tsp soy sauce

Salt to taste

1/2 tbsp oil

Heat a pan over the medium heat and add oil.

Add garlic and sauté until light brown.

Add chicken, soy sauce, sugar and salt and stir for 3-5 minutes or until chicken is cooked and light brown from the outside.

Add white pepper and stir then turn off the heat.

For Pumpkin & Egg Stir fry

3/4 cup shredded pumpkin

1 large egg

3 cloves garlic- minced

1/4 cup of stock or water

1 tsp soy sauce

Salt and white pepper to taste

1 spring onion- sliced into 2 inches long

Heat the pan over the medium heat and add oil.

Add garlic and sauté until light brown.

Add pumpkin and stir for 1 minute.

Add soy sauce, salt and pepper and 1/4 cup of stock.

Stir for few more minutes or until the pumpkin is just cooked but not soft.

Crack on egg in and stir well until the egg is cooked

Add some spring onion and mix well then turn of the heat.

Now all you have to do is put some rice in the box, add both the stir fries over the top and you are ready to go.
