I’ve been on the hunt for some quick and healthy recipes that will still satisfy a sweet tooth lately, and this Easy Healthy Banana Bread has been in our oven almost daily since I first made it!
With only a few ingredients, its not only delicious, but a quick and convenient way to use up bananas before they go bad!
You can also play around with the recipe a little to suit your taste buds! The loaf pictured is exactly as the recipe states, but we’ve made it with dark chocolate chips (about 1/4 cup) and raisins as well (about 1/3 cup)!
I started with this recipe in an effort to find a more healthy snack for Maddie, and this has not only become that, but she asks for it as a treat when she successfully uses the potty! Score one for Mom!
Ingredients
3 ripe bananas
2 tbsp unsweetened applesauce
1/3 cup sugar
1 tsp baking powder
1 tsp vanilla
1/2 tsp cinnamon
3-4 tbsp flaxseed meal
1 3/4 cups whole wheat flour
Instructions
Mash the bananas in a bowl until smooth.
Add in the applesauce, cinnamon, and vanilla and stir.
Mix in the sugar and baking powder until well combined.
Add in flaxseed, followed by flour, and mix until the flour is incorporated (will still be sticky).
Move to a greased loaf pan and bake at 350 degrees for 45 -50 minutes.
Move to a rack to cool for about 15 minutes before slicing.
