We were greeted by a grey and hot summer day on Sunday, I had been working in the garden all morning pulling out weeds (hate doing it, but the little pests keep growing back) and all I felt like was some much needed rest and some comfort food with our afternoon tea. I certainly didn’t want to spend a lot of time in the kitchen so I just wanted something that required minimal effort. This blueberry muffins recipe is quick, easy and delicious. A family favorite, for sure.

Preparation: 7 min
Cooking: 30-35 min
What you’ll need:
2+1/2 cups of self-raising flour
1 cup of caster sugar
1 tsp of baking powder
1 tsp vanilla extract
1/2 cup of milk
1/2 cup of vegetable oil
1 egg
1 tbsp of demenara sugar
12 muffin cases
Box of fresh blueberries or any other fruit that you like!
Easy blueberry muffin base recipe
How to make it :
Pre-heat you oven to 180ºC /350ºF
In a big bowl mix the dry ingredients : the flour, the sugar and the baking powder.
Make a well in the center of the dry ingredients. Pour into that well the vegetable oil, the milk, the vanilla extract and the egg.
Mix everything together folding gently. Don’t over mix.
Add the fresh blueberries and fold to combine.
Place your muffin cases in the muffin tray and spoon the mixture evenly into each case all the way to the top.
Sprinkle demenara sugar on top of each muffin and bake in the oven for 30 to 35 minutes.
