I’m a huge fan of anything coconut, so I decided to experiment some more with coconut flour. These muffins have done a great job in satisfying my sweet tooth on this Paleo journey I’m on, & are a big hit with my son & his friends. You may want to double the recipe, since this only yields 6-8 muffins, they go pretty fast!
INGREDIENTS
1/4 cup coconut flour
1/4 cup coconut oil, melted
2 eggs, at room temperature, whisked
1 tablespoon unsweetened applesauce
1 tablespoon honey
1/4 teaspoon baking soda
1 teaspoon apple cider vinegar
unsweetened, shredded coconut for sprinkling
PREPARATION
Preheat the oven to 350 degrees. Place liners in the cups of your muffin tin. Mix together the coconut flour & coconut oil until smooth, then stir in the eggs. Add the remaining ingredients & stir well. Divide the batter between the muffin cups & bake 20 -25 minutes, until a toothpick comes out clean, & the muffins are slightly golden on top. Sprinkle with some shredded coconut.
