Baked Salmon with Lemon, Spinach and Tomatoes

Ingredients
- 4 (6-oz) wild Alaskan salmon fillets (or another environmentally friendly choice), skinned
- 1tbl olive oil
- 1/4tsp salt
- 1/4tsp pepper
- 1/4tsp red pepper (cayenne)
- 1 medium tomato, chopped into bite-sized cubes
- 4 cups spinach, washed and dried
- 1 whole lemon
Instructions:
- Preheat oven to 375 degrees.
- Coat the salmon with the olive oil. Combine salt and peppers and sprinkle evenly over both sides of the salmon. Place the salmon in a baking dish with a little room between each fillet. Put the chopped tomato evenly over the tops of the salmon.
- Bake for aproximately 20 minutes (my oven always takes longer, so it could take up to 40), or until the salmon is no longer bright red and flakes with a fork.
- To serve, place 1 cup of spinach on each of 4 plates. Top each plate with a salmon fillet and accompanying tomatoes. Finish it off with a squeeze of lemon juice and some zest if wanted.
