Baked Salmon with Lemon, Spinach and Tomatoes

Adapted from FatSecret

Serves 4     Calories/Serving: 335

  • 4 (6-oz) wild Alaskan salmon fillets (or another environmentally friendly choice), skinned
  • 1tbl olive oil
  • 1/4tsp salt
  • 1/4tsp pepper
  • 1/4tsp red pepper (cayenne)
  • 1 medium tomato, chopped into bite-sized cubes
  • 4 cups spinach, washed and dried
  • 1 whole lemon

  1. Preheat oven to 375 degrees.
  2. Coat the salmon with the olive oil. Combine salt and peppers and sprinkle evenly over both sides of the salmon. Place the salmon in a baking dish with a little room between each fillet. Put the chopped tomato evenly over the tops of the salmon.
  3. Bake for aproximately 20 minutes (my oven always takes longer, so it could take up to 40), or until the salmon is no longer bright red and flakes with a fork.
  4. To serve, place 1 cup of spinach on each of 4 plates. Top each plate with a salmon fillet and accompanying tomatoes. Finish it off with a squeeze of lemon juice and some zest if wanted.
