A Cookie For Your Monster
Although this blog may not reflect it- I am an avid baker. I am actually known more in my family for baking yummy desserts than I am for my savory dishes. I started out baking all the time, and thought my heart was for the oven..but then soon realized I LOVE to cook, too! So, anyway, here is a simple cookie recipe that I based from another cookie recipe that my father-in-law would do backflips for! This one is just as good!

Oatmeal Cookies with Walnuts & Sour Cherries

INGREDIENTS:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
2 tablespoons cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, at room temperature
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1 1/2 cups old-fashioned rolled oats
1 cup dried sour cherries
3/4 cup chopped walnuts, toasted

DIRECTIONS:
Preheat the oven to 350 degrees. In a bowl, sift together the flour, baking powder, cinnamon, and salt. Set aside. In a large bowl, combine the butter, brown sugar, and granulated sugar. Beat on medium speed until smooth. Add the eggs, one at a time, then add the vanilla, beating on low speed until well blended. Add the dry ingredients and rolled oats and beat until incorporated. Add cherries and walnuts.
Drop by heaping tablespoons onto rimless baking sheets, spacing about 3 inches apart. Bake the cookies, one sheet at a time, until they are evenly light brown in color and the tops feel firm to the touch, about 15-20 minutes. Let the cookies cool on the baking sheets, about 5 minutes, then transfer to wire racks to cool completely.
