These Ultimate Game Day Nachos are drizzled in nacho cheese and homemade sour cream. Piled high with guacamole, and a fiery kick of jalapeños. This is my most requested appetizer for every big game day gathering
There is something about loaded nachos that make them quintessential comfort food. While many might think of nachos as junk food, VEGAN nachos are practically a salad Start with an organic corn chip, salt-free is best. Generously pour on the nacho cheese sauce which is almost all veggies. On top of that add protein packed black beans, and then add more veggies; tomatoes, jalapeños, avocado #itsafruitbutgowithit as you can see there is nothing junk foodie about this nourishing meal that will delight everyone at the table!
To start this recipe you will need to make a cheese sauce, and not just any cheese sauce, but the best, melty, gooey, delicious, completely dairy-free cheese sauce. Oh and did I mention it is completely oil free too, and the base ingredients are potatoes and carrots This cheese sauce recipe will make a lot more then what is needed for the nachos, but feel free to use the leftovers for pasta, or drizzled on top of a baked potato. I have a feeling you won’t run out of ideas to use it all up, so make the full batch

This is the BEST Vegan Nacho Cheese Sauce! Made with only all-natural ingredients, and takes only 20 minutes to make.
Nacho Cheese Sauce
- 2 Medium Potatoes or 4 Small Potatoes
- 2 Carrots- Peeled
- 1/2 Cup Water
- 1/4 Cup Soaked Cashews
- 1/4 Cup + 2 Tbsp of Nutritional Yeast
- 1 Tbsp Lemon Juice
- 1 Tsp Paprika
- Cracked Black Pepper
Directions
- Boil or steam potatos and carrots until tender – about 15 minutes
- Take them out of the water and save 1/2-1 cup of the water
- Put all ingredients in a food processor or blender. Blend until smooth
- Add the water in slowly 1/4 cup at a time, until you reach the desired consistency. I used a 1/2 cup
- Enjoy!

Now that you have the “Nacho Cheese Sauce” we can start to assemble the nachos.
In a small sauce pan pour in your beans to warm them up for serving. Spread your chips out in an even layer on a serving dish, or on individual plates for each person. Then pour the nacho cheese sauce evenly over the chips. Drain off any liquid from the beans and add them on top of the sauce. Go easy here, and resist the urge to go really heavy on the beans. If you use too much, the chips are hard to pick up and will get soggy.

Now its all about customization from this point forward. You can throw on some sliced jalapeño peppers, sliced tomatoes, sliced black olives are good too. The trick here is to spread everything out evenly across all the nachos. Don’t pile it all in a big heap in the middle — then the nachos on the sides won’t get the benefit of the yummy toppings! For the final touches I added a simple smashed avocado guacamole and drizzled on my Homemade Sour Cream – Which does take 12 hours to make, so feel free to use a store bought vegan sour cream, if you didn’t make it ahead of time.

For great tasting nachos go easy with the toppings. You’re better off making 2 or 3 pans of nachos and spreading the cheese sauce, beans and toppings sparingly rather than piling it all into one pan. Of course, if you like your toppings heavy, you can always use a fork, then you don’t have to share

- 1 Bag of Tortilla Chips
- 1 Can of Black Beans
- “Nacho Cheese” Sauce
- 1 Avocado
- Vegan Sour Cream or My Two Ingredient Raw Sour Cream
- Cherry Tomatos
- 1 Jalapeno
- 1 Can of Black Sliced Olives
- Cilantro
