Homemade Guacamole

You might be wondering what possessed me to share a guacamole recipe on Valentine’s Day, but I didn’t make this guacamole. In fact, I never make guacamole. But I do have a boyfriend that makes bomb guacamole and I figured for Valentine’s Day I would share my favorite recipe from my valentine.

This has been the one thing that he makes on a regular basis (probably because I request it at least once a week) until just recently. For his birthday I bought him a grill and let me tell you, that has been the best gift – to the both of us. I used to make dinner almost every night except the rare night or two where I would tell him he was in charge. This was usually followed with, where do you want me to pick up food from?

But now that we have this grill, he is cooking up a storm! He does a lot of carne asada tacos which means he makes his guacamole too. I absolutely love his guacamole! I could eat a whole entire batch of it, I don’t, but I really want to. We use it for tacos, to top salads instead of dressing, and of course the classic dip for chips. It is out of this world!

When I asked him to make guacamole so I could blog about it, I wasn’t sure what his reaction would be. He usually plays Xbox while I do all my cooking and photographing on the weekends. But he was so pumped! He kept stopping while making the guacamole to see if I wanted to take pictures and he reminded me a few times of how to write out the recipe.

I am sure he will be going through this post to check for any recipe errors. It’s funny because he just recently started reading my blog posts. I didn’t think he did unless I specifically told him to, but I came home the other night from work and he said that I talk him up too much in a recent post. So what if I do! He’s pretty easy to brag on.

This Valentine’s Day is a little bit of a bummer for us. He had to travel to the Philippines for work and will be there till the 25th, so no celebrating together on Valentine’s Day, but I have already booked a surprise or two for when he gets back.

I hope everyone has an amazing Valentine’s Day, whether or not you are spending it with someone or not. But if you do have a special someone, I recommend making this guacamole. It’s definitely won my heart

Ingredients


4 avocados, halved and seeded
½ red onion, diced
½ bunch cilantro, chopped
1 beefsteak tomato, diced
2 jalapenos, diced with skin and flesh (remove skin and flesh for less heat)
Juice of half a lime
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon black pepper


Instructions


In a large bowl place the scooped avocados.
Add salt, pepper and garlic powder and mash until desired consistency.
Fold in onions, cilantro, tomato, and jalapenos.
Squeeze lime juice and mix.
Let sit at room temperature for one hour and serve.
