

Carrot Bundt Cake with Cream Cheese Frosting

Ingredients

- 2 cups flour
- 2 cups sugar
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 2 cups carrots (peeled and finely grated)
- 1 teaspoon orange zest
- 1 cup golden seedless raisins (optional)
- 3/4 cup crushed pineapple (drained)
- 1 cup vegetable oil
- 4 eggs
- 2 teaspoons vanilla extract
Cream Cheese Frosting
- 1/2 cup butter (softened)
- 8 ounces cream cheese (softened)
- 1 teaspoon vanilla extract
- powdered sugar to taste
- milk to taste
Directions
- In a bowl, whisk together flour, sugar, baking soda, baking powder and all spices.
- In a separate bowl, combine grated carrots, orange zest, raisins and crushed pineapple. Stir in vegetable oil, eggs and vanilla until combined. Stir flour mixture into carrot mixture.
- Pour into a greased bundt pan and bake at 350 degrees for 50 minutes. Frost with cream cheese frosting once bundt cake is completely cool.
- Cream Cheese Frosting- Beat softened butter and cream cheese together with an electric hand mixer. Add vanilla. Mix in powdered sugar. Add more powdered sugar and milk if needed until you get the desired consistency.
