Gourmet Cake Donuts [Gournuts]

I am fully aware of how unhealthy these little bites of heaven are. I am aware of the complications of high cholesterol and heart disease. Yet I am also aware that sometimes, on certain days, A DONUT IS ALL YOU NEED. Okay, that was dramatic. But truly, these fried cake donuts that are generously drizzled with a few different gourmet glazes are quite satisfying. It is my dream to open up a little gourmet donut shop in Phoenix someday, and I believe these would certainly be a hit.

Ingredientology:

The batter for these donuts is a “cake donut” batter, in that it has no yeast, simply baking powder and an egg to help them rise while frying. Frying the donuts gives them a crunchiness on the outside, while maintaining a moist and dense inside. The three glazes made for these are: Orange/chocolate, Maple/coconut, and Raspberry. These flavor combinations can be described as “ideal” if one were to consult the Flavor Bible

Makes 10 donuts.

The Ingredients:

2 cups all-purpose flour

1/2 cup granulated sugar

1 teaspoon salt

1 & 1/2 Tablespoon baking powder

Pinch of nutmeg

Dash of cinnamon

2 Tablespoons melted butter

1/3 cup milk

1 egg, beaten

1 quart oil for frying

The Method:

  • Begin to heat oil on medium heat
  • Combine flour, sugar, salt, baking powder and spices
  • Add melted butter, milk, and egg
  • Turn dough onto floured surface, patting into a 12 inch disk
  • Using a cookie or biscuit cutter, cut out rounds
  • Use a cap to cut out center
  • Attempt to see if the oil is ready by placing one of the cut out “donut holes” into the oil. If it turns black, the oil is too hot, if it takes too long to float back up to the top, the oil is too cold.

As you can see, with my first batch the oil was too hot. I turned it down and let it cool a bit and then began to fry again.

Chocolate Orange: Combine ingredients, heating in microwave at 30 second intervals until melted 

4 ounces dark chocolate

1 Tablespoon butter

1 Tablespoon orange zest

1/2 teaspoon vanilla extract

Sprinkles, if desired

Maple Coconut: Combine ingredients together in bowel

3/4 cup powdered sugar

2 Tablespoons butter, at room temperature

1 teaspoon maple extract

2 Tablespoons heavy cream

Flaked coconut for topping

Raspberry: Combine ingredients together in bowl

3/4 cup powdered sugar

3 Tablespoons raspberry preserves

2 Tablespoons heavy cream
