Often, we need quick and easy recipes that call for few ingredients but truly hit the spot. This sweet butternut squash will definitely cure your sweet tooth without adding jiggle to your wiggle. The easiest way is to buy packaged frozen squash but if you end up like me and your store doesn’t sell frozen butternut squash then you can buy fresh butternut squash. I was lucky to find pre-peeled though don’t get to intimidated by a whole squash. All you need to do in order to prepare a whole squash for cooking is slice the top and bottoms off, cut in half, scoop out the guts, use peeler to get off outer skin then cut into small cubes. To keep this sweet recipe low calorie, I used NuNaturals stevia (my absolute favorite brand…perfect taste, texture, and consistency) to sweeten. Stevia is showing up in more local stores but can be ordered on amazon.com
Sweet Cinnamon Butternut Squash
3 cups cubed butternut squash
olive oil cooking spray
cinnamon
sea salt
2 packets of stevia (about ½ tsp)
Preheat oven 350 degrees.
Line a cookie sheet with tinfoil. Place cubed squash onto the sheet making sure not to overlap any pieces. Do a quick spray with your cooking spray then sprinkle cinnamon (or dump if you are a cinnamon fan like me!), salt, and stevia over the butternut squash. Do another quick spray with your oil. Put into the oven. Bake at 350 for 35-40 minutes making sure to turn the squash at 25 min. ***Frozen squash will take half the time to cook. Enjoy!
