Avocado and Egg Breakfast

This morning I was up and at em’ quite early.  I had a lot to take care of on my ‘day off’.  It’s funny how that works out sometimes.  Our day off seems to be a heck of a lot busier than our day on.  Just saying. Anyway, one thing I look forward to on days when I am at home for most of the morning (notice I didn’t say day off..) is cooking breakfast.

I.LOVE.Breakfast.Food.

Period.  Usually my ‘at-home’ breakfast consists of some sort of egg.  One way I like to have eggs is by making an easy breakfast sandwich.  (My fireman LOVES this, too!)  The usual includes:

  • 2 egg whites scrambled
  • 1 whole wheat english muffin, toasted
  • 1 slice (reduced fat) colby-jack cheese
  • 3-4 slices avocado

Pile all ingredients over that toasted English Muffin, and Wah-Lah!  You have breakfast 🙂  This morning my avocado made a fashion statement for Fall..kinda looks like its sportin’ animal print, huh?  Really brightened my morning, so hopefully I’ve done the same for you!  How bout I make it even brighter for ya.. this breakfast sandwich provides 270 calories, 10 grams fat (the heart healthy kind!!  Only 3g saturated), 28g carbohydrates, and 20 grams protein.

Perfect start to get you through the first part of your day.  Enjoy!
