leftover pumpkin in.
Yes, we all have that problem. We get excited about a recipe
on Pinterest, go and buy a can of pumpkin, make the
pumpkin-whatever-deliciousness-you-prefer, and then you somehow always end up
with about 1/2c. of pumpkin left. And it sits away in your fridge and you
discover it five weeks later when it is much too late.
In this recipe, frozen blueberries and soymilk create a
sweet, refreshing flavor. But the secret to its smooth and creamy texture is
the pumpkin! It adds a depth of flavor, stops it from being too sweet (who
wants a sickeningly sweet smoothie to start the day? Yuck!), and lets you use
all that leftover pumpkin! Plus, it provides a huge nutrient boost to make your
morning the best it can be! Also, it includesapple pear, which tastes like what it sounds: both an apple flavor and a pear texture. If you don’t know what it is, I suggest either google or talking to your produce guys so they can show you (if apple pears are not available at your store, I recommend a normal, sweet, slightly overripe apple)

To make Autumn Blueberry Smoothie: combine 1c. frozen blueberries, 1 small cubed apple pear (available in early fall months– could also use a small chopped up apple if wanted, but the apple pear is so good!) 1/2c. soymilk, 1/2c. pumpkin puree, and 2tbl splenda in a blender until smooth and thick. Yum!
