Pumpkin chocolate chip cookies, it wouldn’t be fall without them! This is my mom’s recipe and it’s the only recipe I ever make. These pumpkin cookies are perfectly soft and moist and full of chocolate chips. I actually make them all year long because we love them so much. Whenever I make them I have to stash several for myself because they don’t last long at my house! –Val

Pumpkin Chocolate Chip Cookies

Ingredients

  • ½ cup butter, softened
  • 1 ½ cups sugar
  • 2 eggs
  • 1 cup pumpkin puree
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoons nutmeg
  • 1 ½ teaspoons cinnamon
  • 1 ½ teaspoons vanilla
  • 2 ½ cups flour
  • 1 ½ cups chocolate chips

Directions

  1. Preheat oven to 375 degrees.
  2. In the bowl of a mixer, cream butter, sugar and eggs.
  3. Mix in remaining ingredients.
  4. Scoop cookie dough out onto a baking sheet and bake for about 10-13 minutes. Do not over bake, cookies should be soft.
  5. Store in an airtight container.
