These Homemade Marshmallows were so much fun to make! They came out sweet, really fluffy and they simply melt in your mouth. I decided to cut them into a heart shape because Valentine’s Day is just a few days away and spreading some love is always a good thing! Some marshmallows I placed in a stick for the kids, some are to give as a gift and the rest goes straight into my morning coffee (no need for sugar)!

What you’ll need:
3 packages of unflavored gelatin or agar-agar (whatever brand you prefer)
1+1/2 cup of sugar
1 cup of honey or better yet, corn syrup
1/4 tsp salt
2 tsp vanilla extract
Icing sugar for dusting

How to make it:
In a bowl combine 1/2 cup of cold water and the 3 packages of gelatin (each as 6g of powder gelatin). Mix gently with a fork and leave it aside to let the gelatin set.
Place a medium size non-stick pan on the heat and add the sugar, salt, 1/2 cup of water and the honey (or corn syrup). Cook over a medium heat until the sugar dissolves completely.
Once all its dissolved, turn the heat to high and let the mixture boil (be careful not to get yourself burned!). Use a cooking thermometer, place it gently on the side of the pan and when the temperature reaches 110ºC / 240ºF it’s ready. Remove from heat.
Using an electric mixer on low speed, gently and slowly add the sugar syrup to the gelatin. Once the syrup is all in, turn your mixer to high speed and mix for about 15 minutes. The mixture will get much thicker. Add the vanilla extract and mix just for a few more minutes.
Grease a 20cm x 30xm (8″ x 12″ inches) pan and dust it with icing sugar. Make sure the bottom and all sides have a good coating of icing sugar.
Pour the mixture into the pan and smooth with a spatula if necessary.
Leave it in a safe place overnight and until sets completely.
Once it’s ready, place a large sheet of parchment paper on a surface. Dust with Icing sugar.
Remove the marshmallow rectangle from the pan. It’ll be a bit sticky, but that’s ok. Remove it with your hands, it will come off easily, you’ll see.
Dust the top with Icing sugar.
Grab your heart-shaped cookie cutter cut out as many hearts as you wish.
Dust all sides with icing sugar to remove all stickiness. If you’re not giving them straight away, keep them in the fridge in a plastic box. Dust the bottom of the box with icing sugar before placing the marshmallow hearts in it
Insert lollipop sticks in the marshmallows and give to the kids, they’ll love it!
Do this one day before Valentine’s Day and everyone will get a special treat on a special day!
