MMMM chia pudding, one of my absolute favorite easy breakfasts for mornings when I’m running low on time. Simply prepare it the night before, throw it in your fridge, and when you wake up, all you have to do is pour it into a bowl, put some toppings on, and you have yourself a nourishing, delicious, super easy breakfast to power your morning.
Serves 1
You will need:
3 tbsp chia seeds
3/4 cup milk of choice (I use coconut milk)
1/2 scoop protein powder of choice
I used Julian Bakery Vanilla Egg White protein, you could use chocolate for an even richer chocolate flavor
1/2 tbsp raw cacao powder
1 tsp maca powder (optional)
toppings of choice
Directions:
Place the chia seeds and milk in a sealable jar (mason jars work beautifully), and shake continuously for a minute or 2.
Add the protein powder, cacao powder, and optional maca powder, place the lid back on the jar, and shake again until the powders are incorporated.
Continue to shake the jar every so often so the chia doesn’t clump up.
Place in your fridge for at least 4 hours, preferably overnight.
When you’re ready to eat it, simply pour it into a bowl and top with fruit, nuts and nut butter.
Alternatively, if you need to leave early, keep the pudding in the jar and add your toppings in the morning. This is a great way to take your breakfast on the go!
