In my continued quest to try & fit anything I can eat in a lettuce wrap, I came up with this recipe! You can use ground chicken or turkey, but make sure to use a mix of dark & white meat, otherwise it’s just too dry when only using the breast meat. This is a great protein packed meal, & the caramelized onions definitely kick the burger up a notch!
INGREDIENTS
1 LB ground chicken or turkey
1/4 cup fresh parsley, chopped
1.5 cups fresh spinach, chopped (go organic on this if you can)
1/2 yellow onion, diced
1 garlic clove, minced
2 teaspoons dried thyme
1 teaspoon dried basil
1 teaspoon garlic powder
salt & pepper to taste
butter lettuce (preferably organic)
sliced avocado
FOR THE CARAMELIZED ONIONS
1 large yellow onion, thinly sliced
2 tablespoons fat of choice (I use coconut oil)
1 tablespoon water
pinch of salt
PREPARATION
In a medium pan over medium, heat the oil, & add the onions & salt. Let them cook down, stirring, so they don’t stick to the pan. When they are slightly brown, pour in the tablespoon of water to help steam & cook them. While they continue to cook (about another 10 minutes,) add all of the burger ingredients to a large bowl, & mix well with your hands. Form 5 balls. Place a large skillet over medium-high heat, & once hot, place a couple of the burger balls into the skillet & flatten with a spatula. Cook on both sides for 6-8 minutes, flipping a couple of times to prevent burning. Repeat with the remaining 3 burger balls. Once done, wrap the burger in a lettuce cup, & top with the caramelized onions & avocado slices.
