These things can only happen by accident in my world.
My first attempt at overnight oats was okay, but the texture of soaked chia seeds is something I definitely need to get used to. It wasn’t bad, though, so I decided to share my version of the recipe in case you’d like to try it.
Vegan Overnight Oats (adapted from Oh She Glows)
Yield: 1 serving
1/3 cup rolled oats
2 Tbsp chia seeds
1 cup unsweetened plain almond milk
1 1/2 Tbsp raw cocoa powder
2 tsp maple syrup (or more, to taste)
1 small banana, sliced
Fresh fruit of your choice
- Stir together in a bowl and refrigerate overnight.
- Place banana in a small container and freeze overnight.
- In the morning, stir and layer with fruit of your choice. (The frozen banana really makes it!)
