I’m still trying to decide what days I should regularly post on. Today is Wednesday…Hump Day! You’ve made it, only two days left until the glorious weekend. So to treat yourself (you deserve it!) my Salted Almond Cacao Bites are the ideal pick me up.
They are incredibly rich, chocolatey morsels and are the perfect for the days when you want to rip into a packet of Tim Tams or a block of Cadburys’. The best part? Super easy, mess free (kind of, if you’re not clumsy like me) and can be stored in the freezer for months – if you don’t eat them first!
Serves: about 24 little chocies
WHAT YOU NEED
100g of cacao butter
4 tablespoons of maple syrup or coconut nectar
4 tablespoons of raw cacao powder
2 teaspoons of vanilla powder
½ teaspoon of Himalayan salt
Nut butter of your choice (I prefer Almond Butter but Peanut is just as tasty)
LET’S CREATE
1.Place cacao butter in a double boiler and stir until melted (sometimes I do this in the microwave and stir every 30 seconds).
2.Once butter has melted add cacao powder, vanilla, salt, maple syrup and stir until combined.
3.Spoon into chocolate moulds until they are half full. Put mould into the freezer for 30mins. Remove from freezer, add half a teaspoon of nut butter on top of each chocolate then top with remaining cacao mix. Place back into the freezer to set for an hour.
4.Remove chocolates from mould and placed into an airtight container, store in the freezer for up to 3 months.
