I’ll spend time washing, prepping, baking, grilling – whatever it may be, if it means that yummy food will be ready and waiting when I need to grab it and run out the door.
Which is one reason why I love these Quinoa Oat Breakfast Bars. Most mornings I’ll have my shake for breakfast, but days like the 4th of July call for something a little more ‘fancy’ don’t you think? Granted, I think this holiday is really for BBQ’s and hamburgers, so I’d still like a breakfast that can be thrown together rather quickly, saving my efforts for the afternoon. That’s where these guys come in. Quick to throw together but full of flavor for a perfectly delicious breakfast.
Ingredients
1 c. quinoa {cooked}
1/2 c. oat flour*
1 c. oats
2 tbs. ground flax seed
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 egg or 3 tbs. egg whites
1/2 tsp. vanilla
1/2 c. applesauce, mashed banana, or greek yogurt
1/4 c. honey
1/2 c. chopped pecans
1/3 c. craisins
Optional: unsweetened coconut, peanut butter or PB2, chia seeds, protein powder, fruit, etc.
*Oat flour can easily be made by placing oats in a food processor and blending until you have a flour like consistency
Directions
Preheat oven to 375 degrees.
Mix all wet ingredients together, add all dry ingredients and mix thoroughly.
Pour into greased 8×8 glass baking dish.
Bake for 20-25 minutes or until a toothpick comes out clean.
