Peanut Butter Swirl Blondies (adapted from runs.on.sundae)
Serves: 9 (9×9 inch pan)
1 stick butter, melted
1 cup brown sugar
1 eggs
2 teaspoons vanilla
1 cup flour
1/2 cup chocolate chips
1/2 cup peanut butter chips
2/3 cup peanut butter, melted
Preheat the oven to 350 degrees F. Spray a 9×9 pan with cooking spray and set aside. In a large bowl, beat butter and sugar until well-combined. Beat in egg and vanilla. Then, slowly beat in flour, until just fully mixed in. Stir in chocolate chips and peanut butter chips. Pour into the prepared 9×9 pan. Then, spoon melted peanut butter over the top. Using a knife, swirl the top of the batter with the peanut butter. Bake 15-20 minutes, until the edges just turn brown. When a toothpick is inserted, only a few moist but intact crumbs should stick to the toothpick. Let cool completely (for the peanut butter layer to firm up) before serving.
Until the next time my oven is on…
