Low-Carb Cheddar Crackers

I can’t take credit for coming up with the recipe. The original source is here (Laurassweetspot.com). I actually found it via Pinterest here, Low Carb Layla wrote out the low-carb version which I tried. If you are living a low carb lifestyle, crackers are a no-no. Every once in a while its nice to have something crunchy in your soup or bean-less chili, or to simply just snack on something crunchy. These crackers satisfied all of the above! For those eating carbs, make the recipe from my original source above, you’ll never need to buy goldfish or ‘cheezy’ crackers again. These have 0 preservatives and are a very healthy alternative. I would think these can easily be frozen if you make them in larger batches. These are so simple to make.

Low-Carb Cheddar Crackers

  1. Preheat oven to 350.
  2. In food processor, add grated cheese, almond flour, salt and butter. Pulse, drizzle the cold water into food processor until dough like consistency.
  3. Remove, wrap in plastic wrap and refrigerate until cold, about 30 min. I placed my dough into freezer the last couple minutes to firm it up.
  4. Roll it out between two sheets of plastic wrap until about about ⅛ -1/4 inch. I used a pizza cutter to cut into squares. You can cut into any shapes.
  5. Place on a non stick baking sheet and place the crackers on sheet. They will spread a little so not too close to each other. Bake on middle rack for about 15 min, depending on thickness of the cracker.
  6. Makes about 1½ cups of crackers.
