Key Lime Pie Filled Strawberries + A Tart Crust

A fun twist on the classic pie! Tart one moment, sweet the next. Each beautifully ripen strawberry is filled with a light and creamy key lime mouse!

These are the perfect simple, yet impressive dessert. There is no baking required and they take minutes to whip up!

Hull each strawberry and cut the tip off, so that they can stand upright. With the small end of a melon baller dig out the inside of each strawberry, be careful not to cut in the sides, or into the bottom.

In a food processor add in avocado, coconut meat, agave, lime juice, lime zest and vanilla, blend until smooth. Resist the urge to eat the whole bowl. Put whipped mixture into a piping bag fitted with a star tip and fill each strawberry. You can also pour the filling into a zip lock bag, and cut one of the bottom tips, fill each strawberry. Keep in refrigerator till ready to serve. Freeze any unused mixture

Ingredients

  • 1 1/2 Ripe Avocados
  • Meat from 1 Thai Coconut or substitute 1/4 Cup + 1 Tbsp of Coconut Cream*
  • 3 Tbsp of Agave
  • 1/4 Cup Lime Juice
  • 1 Tbsp of Lime Zest
  • 1/4 tsp of Vanilla
  • 1 Pint of Organic Strawberries

I first made this dessert using the meat from one thai coconut, but as a substitution you can use *Coconut Cream – Place a can of full fat coconut milk in the fridge, overnight. Spoon out the coconut cream, and leave the water at the bottom of the can.

Ingredients

  • 1 Cup of Pitted Dates
  • 1/2 Cup of Almonds
  • 1/2 Cup of Pecans
  • 1/4 Cup Shredded Coconut
  • 1 Tbsp Coconut Butter

Directions

  1. Place almonds, and pecans in a food processor and blend till finely ground
  2. Add dates, coconut, and coconut butter, and process till fully combine
  3. Pour crust into a tart pan, and firmly press till evenly spread
  4. Pour in filling, and top with strawberries
  5. Freeze for 1 hour, before enjoying !
  6. For longer storage, place in the freezer without the strawberries. Let defrost for 15 mins, and add strawberries slices before serving
