I like to change what I eat forbreakfast regularly.
I become obsessed with something for a couple of weeks, eat it to death, then have to change things up again. My latest obsession is this chia seed, hemp seed and buckwheat groat muesli. It’s delicious and light but really filling and seems to be giving me bundles of energy.
The chia seeds are a great source of morning protein, the hemp seeds full of omega-3 and the buckwheat groats not only add a lovely crunch, but they’ are also a delicious source of energising nutrients.
I make a jar of it to store and then it’s ready and waiting for me when I need it. This recipe fills a medium-sized Kilner jar.
4 tablespoons of black chia seeds
4 tablespoons of shelled hemp seeds
2 tablespoon of buckwheat groats
2 tablespoon of shredded dried coconut
Mix all the ingredients together and there you have your muesli – easy!
To eat, you only need a small tablespoon each time. Pop this in a bowl (you can do this the night before if you like your chia seeds really well soaked) and just cover with either almond milk or water. Leave for at least 10 minutes for the chia seeds to soften and expand.
I top with a drizzle of maple syrup (I do have a very sweet tooth), and fresh fruit.
