The great thing about this pasta salad is that you can add anything you like to it.  The vegetable options are limitless and there are many varieties of olives as well. I made this version vegetarian but if you like you can add cubed salami or cheese to it for more of an antipasti type pasta salad.

The dressing for this pasta salad is a copy-cat recipe of the Olive Garden’s Italian salad dressing that I got from DessertNowDinnerLater.com and it has become a favorite of mine.

Ingredients

Easy Pasta Salad

  • 1 1 pound boxdried pasta, any shape you like
  • 2 cupsbroccoli florets, blanched and drained
  • 1 cuponion, finely chopped
  • 1 cupred bell pepper, chopped
  • 1 8 ounce packagebaby bella mushrooms, sliced
  • 1 15 ounce canpitted black olives, drained

Italian Salad Dressing

  • 2 packetsdried Italian salad dressing mix
  • 1 1/2 cupsvegetable oil
  • 3/4 cupwhite vinegar
  • 1/2 cupwater
  • 1 teaspoonsugar
  • 1 teaspoonItalian seasoning
  • 1 teaspoonkosher salt
  • 1/2 teaspoonblack pepper
  • 1/2 teaspoongarlic powder
  • 1 tablespoonmayonaise

Instructions

Easy Pasta Salad

  1. Boil pasta according to package directions. In a large bowl combine drained, cooked pasta, broccoli, onion, red pepper, mushrooms and olives. Toss to mix well. Pour Italian salad dressing over the pasta salad and mix well. Refrigerate for at least 2 hours before serving.

Italian Salad Dressing

  1. Combine all ingredients in a medium sized bowl and whisk until thoroughly combined and the dressing is smooth. Refrigerate any left over salad dressing.
