Dragon Porridge

Ive never really been a fan of the traditional porridge that resembles the clag paste glue that you use in primary school…Until I recently discovered that it doesn’t have to be like that. As the mornings are getting colder I wanted to experiment and find a warming brekky that would fill me up with slow releasing energy for the busy day ahead. Theres so many different ways to make porridge and this is my favourite at the moment If you can’t get your hands on red dragon fruit then you can use berries like raspberries to get pink the colour

greens
Ingredients
50g oats
350mls dairy-free milk or water (I prefer coconut milk)
1 red dragon fruit
1 banana
2 tbsp coconut sugar or maple syrup
1/2 cup blueberries
2 tbsp shredded coconut

optional extra yumz…
-flax seeds
-hemp seeds
-chia seeds
-nuts
and so much more, get creative !
Method
slice the banana, remove the flesh from the dragon fruit and add both into a small pot with all of the remaining ingredients
bring to the boil then reduce to a simmer for 4-5 minutes, stir regularly and keep an eye on it to make sure it doesn’t stick to the bottom of the pan
3. pour the mixture into bowls and serve with your favourite toppings…I usually just keep extra of all the ingredients then add them fresh on top of dishes. Enjoy Xx
