Cinnamon Chocolate Chip Muffins

Ingredients:
- 1c. whole wheat flour
- 1c. all-purpose flour
- 1tsp baking powder
- 1/2tsp baking soda
- 1/4c. splenda
- 1/4tsp salt
- 1/2tsp cinnamon
- 1 large egg
- 1/2c. fat free vanilla yogurt
- 1/2c. unsweetened applesauce
- 1tbl canola oil
- 1/2c. light vanilla soymilk
- 1/4c. light brown sugar, packed
- 1tsp vanilla
- 1/2c. semi-sweet chocolate chips
- Cooking spray
Instructions:
- Preheat oven to 400F.
- In a medium-large bowl, mix together flours, baking powder, baking soda, splenda, salt, and cinnamon. In a smaller bowl, whisk together egg, yogurt, applesauce, oil, soymilk, brown sugar, and vanilla until well-combined.
- Pour wet ingredients into the dry, mixing just until moist (do not overmix!). Fold in chocolate chips.
- Spray a 12-cup muffin pan with cooking spray and scoop batter into each one, filling about 2/3 of the way full. Bake for 17-23 minutes, or until a toothpick inserted in the center of the muffin comes out clean. Allow to cool slightly before trying to remove from pan.
