Cinnamon Chocolate Chip Muffins

It’s too bad you’re not here right now, because these muffins are the perfect way to make any day brighter , with
the sweetness of brown sugar and cinnamon in a delectable batter that is
laced with chocolate chips.

Cinnamon Chocolate Chip Muffins

Serves 12      Serving Size: 1 regular-sized muffin            Calories/serving: 161

Ingredients:

  • 1c. whole wheat flour
  • 1c. all-purpose flour
  • 1tsp baking powder
  • 1/2tsp baking soda
  • 1/4c. splenda
  • 1/4tsp salt
  • 1/2tsp cinnamon
  • 1 large egg
  • 1/2c. fat free vanilla yogurt
  • 1/2c. unsweetened applesauce
  • 1tbl canola oil
  • 1/2c. light vanilla soymilk
  • 1/4c. light brown sugar, packed
  • 1tsp vanilla
  • 1/2c. semi-sweet chocolate chips
  • Cooking spray

Instructions:

  1. Preheat oven to 400F.
  2. In a medium-large bowl, mix together flours, baking powder, baking soda, splenda, salt, and cinnamon. In a smaller bowl, whisk together egg, yogurt, applesauce, oil, soymilk, brown sugar, and vanilla until well-combined.
  3. Pour wet ingredients into the dry, mixing just until moist (do not overmix!). Fold in chocolate chips.
  4. Spray a 12-cup muffin pan with cooking spray and scoop batter into each one, filling about 2/3 of the way full. Bake for 17-23 minutes, or until a toothpick inserted in the center of the muffin comes out clean. Allow to cool slightly before trying to remove from pan.
