Chocolaty cookies filled with pistachios for a perfect crunch with every bite. These lavender cookies are the perfect treat for showers, tea parties, and any occasion where you are feeling extra fancy.

Servings: 24 cookies


  1. Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper.
  2. Using a stand mixer, combine eggs, butter, sugar and lavender simple syrup. Mix on low until well combined.
  3. In a large bowl, sift together flour, baking powder and salt. Pour the dry ingredients over the wet and mix until combined.
  4. Fold in the chocolates and pistachios just until combined. Do not over work your dough.
  5. Evenly drop 1 tablespoon of dough onto the lined baking sheets.
  6. Bake cookies for 10 to 15 minutes, until the edges are golden brown.
  7. Let cool for 5 minutes on baking sheet and then finish cooling completely on wire racks.
