Chocolaty cookies filled with pistachios for a perfect crunch with every bite. These lavender cookies are the perfect treat for showers, tea parties, and any occasion where you are feeling extra fancy.

Instructions
- Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper.
- Using a stand mixer, combine eggs, butter, sugar and lavender simple syrup. Mix on low until well combined.
- In a large bowl, sift together flour, baking powder and salt. Pour the dry ingredients over the wet and mix until combined.
- Fold in the chocolates and pistachios just until combined. Do not over work your dough.
- Evenly drop 1 tablespoon of dough onto the lined baking sheets.
- Bake cookies for 10 to 15 minutes, until the edges are golden brown.
- Let cool for 5 minutes on baking sheet and then finish cooling completely on wire racks.
