Chinese Sausage Fried Rice
Have you ever tried Chinese Sausage? It’s extremely fat and smoky. I used to think it’s awkwardly sweet that it didn’t belong in savory dishes. Chinese sausage can be very overpowering. That’s why only a little of it can be made to something wonderful.

I like Chinese Sausage now. It’s weird because I have never enjoyed it when I was a kid. Now I think the sharp sweet of the sausage is very satisfying. When the sausage is fried, the outside turns brown and crispy while the chunks of fat inside starts melting, making it juicy. I usually eat it with rice. And here is a simple recipe you can try.

Chinese Sausage Fried Rice

Ingredients

2 Chinese Sausage- thinly sliced

3 cups cooked rice

2 cloves garlic- bruised

2 eggs

1 tomato- sliced

1 onion sliced

1 spring onion- sliced

1 tbsp light soy sauce

1 tbsp oyster sauce

1 tsp vinegar

½ tsp- ground white pepper

1 tbsp oil

Direction:

In a large pan over medium heat, heat oil and sauté garlic until aromatic.

Add Chinese Sausage and fry until browned.

Turn the heat high, and add egg and gently stir to make small pieces.

Add rice, tomato and onion; and season with light soy sauce, oyster sauce, vinegar and ground white pepper. Stir further for a few minutes to mix all ingredients together.

Add spring onion and check the flavor. Serve hot.
