Cherry Cucumber Guacamole

Guacamole is hard to improve upon.  Creamy avocados, jalapeno, onions, cilantro, sea salt, and diced tomatoes are kind of make up the dream team when it comes to chip dips, but the other night I really wanted some guac and all I had on hand was a few avocados, cucumbers, and a bowl of cherries.  Now, I wasn’t sure how it would turn out, but I decided to try it.  The combo turned out to be really refreshing and light.  Cucumbers and avocados are a match made in heaven and the cherries added a tart little twinge of sweetness. Overall, a nice little take on one of my favorite foods.

Cherry Cucumber Guacamole

Ingredients:
2 avocados
1 teaspoon sea salt
1 teaspoon garlic powder
1/2 cucumber, diced
1/4 cup cherries, pitted and halved
2 teaspoons lime juice

Prep Time: 10 minutes
Yields: 4 Servings

Method:

1. Peel avocados and remove pits.  Discard one pit and set one aside.  Place avocados in a small bowl and mash with a fork or potato masher until creamy.

2. Stir in spices, cucumber, cherries, and lime juice.  Place pit in bowl to keep the avocados from turning brown.  Serve with tortilla chips.
