I’m also terrible at surprises. In fact, I’m shocked that I kept this surprise as long as I have. I’ve told basically everyone else in our lives but John where we are going and I can’t wait to see his face when we show up at the airport and he sees our desintation on the flight screen! Anyway, it’s the first week in December so I guess I still have at least one more weekend until I feel like I have to watch carefully what I eat. For now, I’ll eat this pizza. It’s basically everything you’d want a dessert pizza to be – fudgy, rich, chocolatey and delicious!
Caramel Brownie Pizza (adapted from Two Peas and their Pod)
Serves: 8
1 cup salted butter
2 cups sugar
1 1/4 cups cocoa powder
1 teaspoon baking powder
2 teaspoons vanilla extract
4 eggs
1 1/2 cups flour
3/4 cup mini chocolate chips
1 cup caramel sauce
1 1/2 teaspoons sea salt
Preheat the oven to 350 degrees F. Grease a 16-inch pizza pan and set aside.
Add the butter to a medium saucepan and melt over medium-low heat. Remove from heat and add sugar. Stir until well-combined, smooth, and shiny. Stir in the cocoa, baking powder, and vanilla extract. Mix in the eggs, until the mixture is smooth. Stir in flour and then fold in chocolate chips. Pour the mixture into the pizza pan. In a small bowl, combine caramel sauce and sea salt. Then, drizzle over the brownie. Swirl the sauce gently into the pizza. Bake for 20-30 minutes, until the brownie is fudgy but fully cooked through. Serve with ice cream and additional caramel sauce.
