Instead of grabbing that sugar-laden Blueberry Muffin from your local bakery on your way to work, you can enjoy a delicious, healthy, high protein porridge alternative that tastes so much like your favorite muffin, but you don’t have to feel guilty about it! You will need:
4 tbsp milled flax
1 heaped cup riced cauliflower
1/3 cup water
1/2 cup unsweetened vanilla coconut milk
1 scoop MRM Vanilla Bean Veggie Elite Protein Powder

½ tbsp NordicNordicBilberry Powder
1 tsp Organic Burst Maca Powder
5 drops Beanilla Maple Flavoring
5 drops Butter Extract
1 tsp cinnamon
sweetener of choice, to taste (if needed, I find it’s sweet enough from the protein powder!)
i would use liquid stevia, but mashed banana, agave, maple syrup would all work
Directions:
In a small sauce pan, add the water, milk, flax and cauliflower.
Turn on the heat to medium.
Whisking every so often, let this cook for about 5 minutes to thicken slightly, so the flax absorbs the liquids
When the porridge has almost reached your desired consistency, add the Vanilla Bean Veggie protein, bilberry powder, maca powder, cinnamon, maple and butter extracts, and sweetener of choice.
Stir until all are incorporated, pour into a bowl and top with whatever you want!!
