Autumn Harvest Salad

With fall and the cooler months coming up, we often think of heavier meals. But this salad is the perfect way to have the fall flavors while having a lighter meal.

Ingredients

Mixed greens
Beets
Pears
Walnuts
Dried cranberries
Sweet potato
Olive oil
Salt
Apple cider vinaigrette


Directions

For sweet potato croutons:
Preheat oven to 350
Cut into cubes
Place on cookie sheet
Drizzle olive oil and salt
Cook for 20 minutes
Simply create your salad
Enjoy!
